Description: A lively deep purple colour. A combination of pepper, spice and herbaceousness found on the nose Along with ripe red-berried fruits follow. Excellent balance of fruit and tannins on the palate which is quite Rhone-like.

Wine Making: Grapes picked at 25 degrees balling. Destalked and pumped through mash cooler into red wine tanks. Cold soaked for 24 hours before adding NT12 yeast. Pumped over four times per day. Lightly pressed when dry. 80% complete Malolactic fermentation in the tanks before going into 100% new small barrels for 15 months (90% French oak and 10% American oak).
Serving: Excellent supplement to meaty dishes such as roast duck or fillet of beef - complements both spicy and sweet flavours - layered and interesting on its own!
