Viticulture: Grapes harvested from a 14-year-old block, planted on a north- western slope of a 200m-altitude hill in the Bottelary Hills, which is a ward of the Stellenbosch region. 4 wire hedge trellis system.
Vinification: Grapes picked at 25° Balling. Destalked and pumped through mash cooler into red wine tanks. Cold soaked for 24 hours before adding NT12 yeast. Pumped over three times per day. Lightly pressed when dry. Malolactic fermentation was completed in the tanks before going into small French Oak barrels for 12 months (35% new oak).
