Description: Rich and complex with layers of ripe black cherry, smoky spice and vanilla; muscular with well honed tannins lending depth and structure to a satisfying core of ripe fruit; well integrated oak treatment with a lovely dry finish.

Style: A fruit driven, full-bodied red wine.

Soil: Clovelly Yield: 8 tons/ha

Grape Variety: 100 % Shiraz

Viticulture: Grapes harvested from a 14-year-old block, planted on a north- western slope of a 200m-altitude hill in the Bottelary Hills, which is a ward of the Stellenbosch region. 4 wire hedge trellis system.

Vinification: Grapes picked at 25° Balling. Destalked and pumped through mash cooler into red wine tanks. Cold soaked for 24 hours before adding NT12 yeast. Pumped over three times per day. Lightly pressed when dry. Malolactic fermentation was completed in the tanks before going into small French Oak barrels for 12 months (35% new oak).

Maturation Potential: 3 – 8 years

Serving: Rich meaty dishes such as lamb, moussaka, pork fillet and venison.

Wine Analysis: ALC: 14.47% TA: 6.1g/l RS: 2.1g/l PH: 3.30

Wine Maker's tasting notes:

Appearance: Glossy ruby red colour

Nose: Opulence of fresh juicy berries, spice and smokey liquorice on the nose.

Palate: Sleek and flavourful; elegant oak. Good balance Ripe fruit with good tannin structure.
